Gluten Escape is a directory of resorts, hotels and retreats sorted by one question: how safe is the kitchen for someone with celiac disease?

Who runs this site

Gluten Escape is published by the team behind Anamaya Resort in Montezuma, Costa Rica, which is one of the properties listed here. We built it because our own celiac guests kept telling us how hard it was to find kitchens they could trust. We hold Anamaya to the same checklist as every other property.

The three kitchen tiers

  • Tier 1: 100% Dedicated Facility. No gluten anywhere on the property.
  • Tier 2: Dedicated Separate Kitchen. Gluten is served on site, but gluten-free food comes from a physically separate kitchen.
  • Tier 3: Verified Celiac Protocol. A shared kitchen that runs checked cross-contact rules.

What "confirmed" and "desk research" mean

Every listing shows one of two labels:

  • Confirmed by the property means the property answered our 10-point kitchen questionnaire in writing, and we show the date and the job title of the person who answered.
  • Desk research means we built the listing from the property's own published information and reviews, and we haven't yet had written answers from the property.

Kitchens, chefs and menus change. Always tell the property about celiac disease before you book and again when you arrive.

Corrections

If anything on a listing is wrong or out of date, tell us and we'll check it and update the page with a new date.

Frequently Asked Questions

Is Gluten Escape independent?

No. It's published by the team behind Anamaya Resort, which is listed on the site. We say so here and on Anamaya's own listing, and every property is judged against the same 10-point checklist.

How often are listings checked?

Every listing shows the date it was last checked. We aim to recheck each property at least once a year, and sooner when we hear about changes.

How we check: each listing shows its kitchen tier and when we last checked it. "Confirmed" means the property answered our 10-point kitchen questionnaire in writing. Kitchens and menus change, so always tell the property about celiac disease before you arrive.
